AL-JAQUE. - For over 17 years a group of women from Montejaque in the Natural Park of the Sierra de Grazalema, Málaga carried out the production of handmade food products and fruit liqueurs, the cooperative was created in 1996 with the purpose of enabling self-employment for women in a rural area that offered few opportunities for this group of society.
Mojo is the essence of the cuisine of the Canarias. It goes with just about everything. Try it with "patatas arrugadas" (small boiled potatoes with salt and lemon) for a taste of the Canary Islands, also you can use it for seasoning and enrich dishes of meat, fish, vegetables, potatoes, stews, soups, etc..
It keeps well in the refrigerator, and is even better after a day or two. Serve at room temperature.
