TRADITIONAL SOBRASADA FROM MALLORCA - EL ZAGAL
Sobrasada is, along with the ensaimada, the great emblem of Mallorcan culinary tradition and one of the most prized delicacies in Spanish gastronomy. Although its origins probably date back to the 16th century, sobrasada as we know it today dates back to the beginning of the 18th century, and since then its production techniques have been handed down from generation to generation.
Sobrasada, which is dark red in colour, with a firm but unctuous texture and a mild, pleasant flavour, is a select sausage with the 'Geographical Indication' seal. It is usually eaten toasted in winter or raw on a slice of a good bread in summer. It is also used as the main ingredient in many Mallorcan recipes or even cooked and mixed with honey.
