What is tarantelo?
Tarantelo is part of the Lomo Blanco being situated between the belly and the white tail. It presents a lower percentage of fat than tuna belly and has a more reddish color. It is often cooked on the griddle, or for tataki and to prepare typical dishes such as tuna with onions.
