Guijuelo, Salamanca
Since 1986 the D.O. Guijuelo has been certifying the quality of the best Iberian acorn-fed hams and shoulders produced in its factory, located in Campillo de Salvatierra (Guijuelo district), which enjoys the privileged climatic conditions offered by the Sierra de Gredos, the Sierra de Béjar and the Sierra de Francia. These qualities create a unique microclimate for the curing and drying of Iberian products.
