The origin of Monte Nevado goes back to a family from the highlands of Segovia, a place that receives the winds from the nearby snowy peaks, with extraordinary climatic conditions for curing hams.
Since its beginnings in 1898, Monte Nevado has been committed to quality and longer curing times. They know how to care for and serve hams to a quality-loving clientele.
They were pioneers in quality vacuum-packed hams.
Their hams come from Iberian pigs whose racial origin and slow growth allow for optimal fat infiltration. More than 120 years of history have allowed them to know the best breeding farms to select them in origin, and from them they elaborate their hams meticulously. They have also accumulated knowledge and experience in order to fine-tune and choose the exact curing time for each ham.
Their master ham makers are in charge of checking and classifying the hams piece by piece, so that each one has the appropriate maturation period.
Their slower and longer natural curing process allows them to obtain all the aroma and flavour of each piece, each one reaching its optimum point at a different time.
All its drying sheds and cellars are located in natural surroundings.
Their secret: Time, breeze and little hurry.
